Gourmet master and holder of 2 Michelin stars – André Jaeger - revealed his ZwyerCaviar 6-course degustation menu called ‘Caviar à deux’. It was presented during a tasting event with the presence of Mr. Köchlin (assistant editor-in-chief of the Handelszeitung), Mr. Kowalski (assistant editor-in-chief of the Bilanz), Mr. Alexander Zwyer (CEO of ZwyerCaviar LLC) and of course the chef – André Jaeger – himself.

The Caviar à deux package includes a sleep-over at the restaurants hotel. The price tag for this unique experience: 750CHF.

Field work at the “Top of the World”

The other day my brother Alex and me went to St. Moritz for a couple of meetings, making sure that ZwyerCaviar will be availabe at the Top of the World during this holiday season.

Several Hotels and ski lodges with breathtaking panoramic views come into consideration.

As soons as there are facts on the table you will be in the know regarding who and where exactly.

Anyway, the last visit took us uphill. Sitting inside a chair-lift but not on ski, instead holding a full BlackPearl box-in-box packaging. That was our first wierd impression of that day. It became better – weirder – when we had to go across a ski slope, wading in snow, to get to that last meeting.

So, watch out these days for some black dots in the landscape. They might be some ZwyerCaviar field agents crawling up the mountain. Just a funny picture I wanted to share.

The winter definitely has arrived. I highly recommend you go to one of the worlds best spots to celebrate this holiday season.

Frutigen: Swiss caviar

I wrote about this project in some previous posts already. But as a Swiss TV channel was airing recently a short sequence about this undertaking I want to share this with my fellow readers.

The animation of the plant looks indeed promising. I hope so, with an investment of aprox. 30Mio. CHF. It shows a glimpse of the future of Swiss caviar. According to the video the full annual caviar production volume will be around 3 tons. I admit that I am not sad at all that Frutigen is still many years away until it reaches any industrial scale. But somehow I can’t wait and am very curious about its caviar. I sure will taste and judge it when the day comes.

Dying Caspian Sea: Pumping-out the marine fauna

Sturgeons major surviving problem besides poaching, overfishing and the dams and hydroelectric power plants that block their natural trails when going into the river systems is another black gold: OIL. The hunt for new oil reserves seems to vindicate every kind of collateral damage done against nature these days. After all its about the prospect of changing the balance of power in the world. And that’s enough reason for many to continue their efforts in turning the Caspian Sea into a cesspool!

It is frustrating to observe the sheer incompetence of the international community in preventing this disaster – or worse: supporting it. Since many years the births of humans around the coastline of the Caspian Sea are showing abnormalisms, cancer rate is skyrocketing and the water is extremely polluted.

In this light, the 5 year long ban regarding sturgeon fishing, which starts next year, seems to be a tinny attempt in finding a future for this ancient fish.

And one might think twice about consuming wild caviar from the Caspian Sea after knowing this. A much safer bet is premium farmed caviar!
