PRESS RELEASE

THE CREAM OF THE CAVIAR CROP

ZwyerCaviar launches at Harrods Food Halls

This month an exceptional new caviar range, ZwyerCaviar, launches at Harrods prestigious Food Halls.   Originating from a remote natural reserve in the heart of Uruguay, the range features the finest hand-selected caviar at the peak of size, flavour, colour and texture.

This award-winning caviar is harvested using an innovative Russian farming principle called ‘wild-raised’, whereby the sturgeon live in a natural reserve and the roe is collected when the sturgeons are at their most mature state.  To ensure the highest quality, ZwyerCaviar is then refined with Portuguese sea salt (Flor de Sal) and rinsed with glacier water from Patagonia, which contributes to a fresh and mild flavour.

With only the most outstanding Oscietra hand-picked for the range, which includes Grand Cru Oscietra, from Russian sturgeon and Premier Cru Oscietra, from Siberian sturgeon, it makes the ideal delicacy for special occasion dining.  Beautifully presented in packaging with an unique cooling and protecting system it also makes a great gift for food aficionados.  Those wishing to taste this delicious delicacy for the first time, can even sample the range with smaller taster Temptation jars.

Worlds most expensive (caviar) curry!

June 2, 2009

A London curry house has celebrated the DVD launch of Slumdog Millionaire by creating a curry that costs more than $4’000 a plate.

Bombay Brasserie is defying the credit crunch with the release of its Samundari Khazana, or Seafood Treasure – a mix of caviar, abalone and a whole lobster.

More than $2000 worth of edible gold pressed onto the skin of cherry tomatoes and scattered throughout the meal helps keep the bill at a premium.

“There are still people out there with money to spend and this curry is a real experience,” head chef Prahlad Hegde told The Sun.

The Sun watched as one cook coated a $170 Scottish lobster with gold while another hollowed out quail’s eggs in order to refill them with $800 worth of caviar.

“The idea is from a basic Indian recipe I got from my mum but we are using the finest ingredients in the world,” Mr Hegde said.

Snail caviar II – now available at Harrods

May 6, 2009

The ultimate in slow food has hit the shelves of Harrod’s food hall. Snail caviar, which is exclusive to Harrods, is produced by De Jaeger in France. The company rears its snails in outdoor pens on a nutritious diet of vegetation and cereal grains, resulting in plump, great tasting snails.

After three years of research De Jaeger has perfected its own method of farming snail caviar and is now offering customers the chance to indulge in the cream-coloured, pearl-shaped delicacy. Each snail lays its eggs once a year, producing around 100 eggs on average. With this tiny, but precious amount, the people at De Jaeger hand pick the eggs every year and sort through them, retaining the best ones for their tins of caviar.

The snail caviar is prepared in a brine of fleur de sel de Guérande, and is available to buy in tins of 50, 125, 250, 500 and 1000 grams. So what does it taste like? Well, according to those in the know, its reminiscent of ‘a walk in the forest after the rain, with the aroma of mushrooms and the undergrowth, tasting of hints of oak leaves and moss’. Admittedly it doesn’t normally cost you £650 for 250g worth of rain, mushrooms and moss, but if caviar is your thing, then its oak flavour and earthy notes could be worth splashing out on.

Available from Harrods in four different sizes ranging from £65/30g to £650/250g.

THE HUNTING PARTY – Cracking down on illegal caviar trade

November 11, 2008

Police Departments start creating their own special units to fight against organised crime syndicates who profit from illegal caviar trade.

USA

An interesting story is wrapped around the paddlefish in the US. A fish which is actually not a sturgeon but a close relative. The Oklahoma police observed that russian poachers living in New York and New Jersey are taking advantage of the fact that the US is tightening import permits on sturgeon eggs and did even impose a ban on beluga caviar back in 2006. This made the native paddlefish a new target for the illegal caviar traders. Or as Larry Manering, the law enforcment chief of the Wildlife Department in Oklahoma, puts it: “This is a multibillion- dollar business, and we’ve got the fish and they know it!”

So, if his unit has a poacher in their net, the poacher will face a fine of 1’000USD first. On the second run it will get costier (25’000USD) and the delinquent goes behind bars for at least 1 year.

UK

Another hunting party against illegal caviar traders is in the UK. The Brits placed their best man for this job, so it seems. Meet Inspector Nevin Hunter. Mr. Hunter and his 20-strong unit have the licence to seize caviar of any restaurant and gourmet store which do not have suficient trading documents. Chefs and alike should start to think about their own unoficial caviar canals, if they dont want to face prosecution and heavy fines.

This unit was set up as part of international moves to fight against illegal caviar trade. And it shows more and more that responsible authorities are putting more thoughts into this matter and get more seriously. Sturgeon poaching and trading with (or just buying!) illegal caviar is not considered a small crime anymore, but an iresponsible act that needs to and will be punished severly.

May the hunt begin!
